Looking for a quick and easy recipe to satisfy your sweet tooth? Well this is it!!!

The reason I love this recipe is because I can quickly whip up a batch on a Sunday afternoon and know that for the rest of the following week, whenever I’m craving something sweet and ‘indulgent’, this baby is stashed away in the freezer and will definitely hit the spot…

The only problem will be…stopping at one piece…trust me!!! You’ll need willpower for this one!

Black Bean Fudge

  • Cook Time: 0 Minutes

Ingredients

  • 1 can black beans, drained and rinsed
  • ½ cup cocoa
  • ¼ cup almond butter (cashew butter would also be amazing)
  • 2 TBS organic coconut oil, melted
  • 1 cup pitted dates or half a bar of dates, soaked in boiling water for 10 minutes
  • ½ tsp cinnamon
  • 1 TBS vanilla essence

Instructions

  1. Line a baking tray or ‘Freezer friendly’ casserole dish with some cling flim.

  2. Add the black beans to a food processor and blend until smooth (You may need to stop the blender to scrape down the sides of it)

  3. Add the almond butter, coconut oil and vanilla essence to the black beans and blend until well combined.

  4. Drain the dates and add them, the cocoa and the cinnamon to the blender and blend until a sticky dough forms.

  5. Press the dough into the prepared tray and freeze for a minimum of 2 hours before slicing.

  6. Keep in an airtight container in the freezer.
