“‘A labour of loaf’”

This recipe is simple, nutritious and filling.
It’s packed with energy and is relatively high in protein. It makes the PERFECT on the go preworkout and is damn delicious!!!
I can’t tell you the difference I have felt since I started having this as a snack before my morning runs…Prior to this, I found that I would be ravenous the entire day, my blood sugars would crash easily and my stomach felt like a bottomless pit!!!
I literally went to bed half an hour earlier last night so that I could fast forward to waking up and getting to have a slice of this with my morning coffee…Yum!!!
These will also freeze really well so you can always bake in bulk.

'A labour of loaf' aka protein banana bread

Ingredients

  • 2 cups oat flour (I make my oat flour using instant oats as the macros are slightly lower than rolled oats)
  • 2 servings vanilla whey protein
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 3/4 tsp cinnamon
  • 1/4 tsp stevia powder (optional but I love sweet stuff)
  • 1/2 tsp himilayan salt
  • 2 small ripe bananas, mashed
  • 3/4 cup pumpkin purée
  • 2 egg whites
  • 1/3 cup honey/maple syrup
  • 1/4 cup unsweetened almond milk or light coconut milk
  • 2 tsp vanilla essence

Instructions

  1. Preheat oven to 180 degrees and spray a large loaf tin with some cooking spray.

  2. Add all of the wet ingredients to a food processor and blend until nice and smooth.

  3. Add the dry ingredients to a bowl and stir until combined.

  4. Slowly add the dry ingredients to the wet ingredients but be sure not to overmix.

  5. Top with some extra sliced banana.

  6. Spoon into the loaf tin and bake for 30 to 40 minutes (dependng on the size of the tin) or until they pass the toothpick test.
