“Cheesecake swirled brownies”

It’s no secret that I am brownie obsessed!!! I think its because brownies used to be a food that I deemed ‘forbidden’…Until I worked out how to create healthy brownies, I hadn’t eaten something that resembled a brownie for at least 10 years…I recently became obsessed with cottage cheese…Like full on obsessed!!!

Dairy was something that I cut out of my diet because I was told that dairy was bad…I ended up developing lactose intolerance because my body was not familiar with anything containing lactose so it didn’t know how to digest it…

How did I fix it? Well, I slowly started incorporating dairy into my diet…and when I say I slowly started to incorporate dairy into my diet…I mean I S L O W L Y started to add dairy…A TBS of yoghurt here and a TBS of cottage cheese there…I’m  happy to say that I can now eat as much dairy as I would like…Although I typically stick to yoghurt, feta and cottage cheese…

ANYWAY, I don’t want to bore you too much so I’ll cut to the chase…STOP whatever you are doing and MAKE THESE!!!

Cheesecake swirled brownies

Ingredients

  • For the brownies: 1 can of red kidney beans, drained and rinsed
  • ¼ cup sugar and salt free peanut butter
  • ½ cup instant oats
  • ½ cup xylitol
  • 1 tsp baking powder
  • ¼ tsp salt
  • 2 TBS honey
  • ¼ cup organic coconut oil, melted
  • 1 TBS vanilla essence
  • For the cheesecake swirl: ¾ tub fat free cottage cheese
  • ¼ cup sugar and salt free peanut butter
  • 1 egg
  • 2 TBS honey, optional
  • 1 tsp vanilla essence

Instructions

  1. Preheat oven to 180 degrees and line a brownie tray with tinfoil, shiny side down.

  2. Add all of the brownie ingredients to a blender or food processor and blend until nice and smooth (this may take a minute or two)

  3. Pour into the prepared baking tray and set aside.

  4. Add the cheesecake ingredients to a clean blender or food processor and blend until smooth and creamy.

  5. Pour the cheesecake mixture over the brownie mixture and gently, using a fork, swirl the mixture into each other.

  6. Pop into the oven for 30-35 minutes.

  7. Allow to cool fully before slicing.

  8. Decorate with some melted dark chocolate or melted peanut butter OR leave as is- I promise either way you will be coming back for more.
