“Cauli bagels”

I was recently shown a diet that had the client eating cauli bread every day. I love cauli bread, and suprizingly it has never bloated me…The only downside of cauli bread has to be the price tag that comes with it!
You can buy 5 loaves of normal bread for what you would spend on 1 loaf of cauli bread!!! This would be enough to feed a family for a month!! Now this particular recipe can be made as muffins, as a loaf or as I have made them, as bagels…They also freeze well so I make them on a Sunday and freeze them for the week ahead…I then pop one into the air fryer, let it defrost and crisp up and voila…Done and dusted!!!

Cauli bread


  • 1 head of cauliflower, broken into pieces
  • 1 egg
  • 3 egg whites
  • 1 TBS coconut flour
  • 2 TBS almond flour
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp garlic powder
  • 1/4 tsp baking powder
  • Chia seeds to sprinkle on top


  1. Preheat oven to 180 degrees and spray a donut tray with some cooking spray.

  2. Add the cauliflower to a food processor and blend until it starts to look like rice.

  3. Spoon the cauliflower into a microwave friendly bowl and cover with a plate. Cook for 2 minutes (This will basically steam and soften the cauliflower). Once cooked, try to squeeze out as much liquid from the cauliflower as possible.

  4. Add the egg, egg whites, flours and spices to a bowl and mix with a fork. Fold in the cauliflower.

  5. Spoon the mixture into the donut tray and top with some chia seeds.

  6. Bake for 20 to 25 minutes.

  7. Store in an airtight container or freeze and defrost when necessary.

Jo's Notes

**Step number 3 (steaming the cauli) isn't crucial as I made these the other day and I was short for time, but it is recommended as it removes a lot of the moisture form the cauli.
