Back in the day, when I thought of ‘healthy’ veggies I typically stuck to green veg…Maybe it’s because of the whole ‘bro diet’ mentality of tuna and broccoli…I’m not sure…Nevertheless, pumpkin was something I would never EVER have dreamed to be low calorie, let alone low carb. In my mind, pumpkin and butternut were the same thing. Please tell me I’m not alone in this!!!
What I love about this recipe is that you can have it hot or cold…Obviously once its been chilled in the fridge for a whole, it turns into a mousse…BUT…if eaten hot, it reminds me of a hot, sticky pudding 🙂 YUMMMMMMM

Pumpkin Protein Mousse
- 1 bag of pumpkin (500 grams)
- 2 scoops of whey protein
- 1 TBS sugar free hot chocolate or cocoa
- 1/2 tsp of stevia and/or a few drops of sweetener (or 1/4 cup honey/xylitol/sweetener of choice)
- 1 TBS vanilla essence
- 1/4 tsp xanthan or guar gum
Steam the pumpkin (either directly in the bag in the microwave, or in a steamer or on the stove)
Once it has cooled for a few minutes, add the pumpkin to a blender or food processer, and blend for a few seconds.
Add the whey protein, sugar free hot chocolate/cocoa, sweetener of choice, and vanilla essence. Blend until smooth.
Lastly, add the xanthan or guar gum and blend for 1 minute.
Spoon into bowls or ramekins and either eat as is, or allow to chill in the fridge for an hour or two.
