“Carrot cake bliss balls”

With Easter just around the corner I thought I would share the recipe for one of my favourite no bake recipes…Carrot cake bliss balls. These little bliss balls are so quick to make. Honestly, it will take you longer to grate the carrots than it will to actually make the balls.

Sheldon isn’t a fan of my no bake treats, or so he claimed. I take all my photos with my iPhone and so if I bake something in the evening, I have to wait for the following day to take pictures of it, as I need the natural light. The reason I use my iPhone and not a proper camera (which I have) is something that I will discuss in a blog post.

Anyway, I thought I was being super productive. I got home from a long day at work, made dinner and decided I would bake something to distress (I have said it before and I’ll say it again, baking is THE best therapy). I came up with these healthy little treats, put them safely into a Tupperware and popped them into the fridge, all ready for me to snap some photos of them the next day.

I am sure that you all know what’s coming. The next day arrives, I come home, open and fridge and ALL. THE. BALLS. WERE. GONE!!! Sheldon literally ate every. single. one!!! I repeat….every single one!!!

So I quickly rustled up another batch, only to have him arrive as I was busy rolling them into balls. The thing is, Sheldon arrived with flowers and a pair of my favourite gym tights, and a small bag of biltong for Brooklyn (our cat). He had a huge grin on his face and said that the suprize balls that I left for him in the fridge made him want to return the favour…awkward 😉

If Sheldon were to ever read this, he would discover that the balls weren’t for him, but thankfully, the chances of him coming and reading through my recipes on here are very small…soooo if you have a pair of gym tights that you are desperate to have…just do what I did and they could be in your possession before you know it 🙂

Carrot cake bliss balls

Ingredients

  • 1 ½ cups cashew nuts
  • ¾ cups instant oats
  • 1 scoop vanilla protein powder (optional)
  • ½ tsp cinnamon
  • ½ tsp mixed spice
  • ½ cup grated carrot
  • ½ cup pitted dates
  • 2 TBS apple purity

Instructions

  1. Add the oats, cashews, protein powder, cinnamon and mixed spice to a food processor. Blend until most of the cashews have been finely chopped.

  2. Add the dates and blend until a sticky ball starts to form.

  3. Add the remainder of the ingredients and blend again, until well combined.

  4. Roll into balls and store in an airtight container in the refrigerator.

*** If you don't want to add the protein powder, then you can add 2 TBS desiccated coconut or another 2 TBS of oats.
