“My ‘everyday’ waffles”

I have waffles literally every single day…I love coming up with waffle recipes because they are just so easy to make, and they are pretty difficult to mess up.

Some recipes are, to a certain extent, more complex than others and that completely depends on who I’m making the waffles for and what I’m wanting the nutritional content to be… Anyway, these waffles are my favourite because they are high in protein and low in carbs and I generally like having a bowl of oats alongside these little pillows of happiness.

A few ingredients and a few minutes are all you need…enjoy!

My 'everyday' waffles

Ingredients

  • 1 scoop whey protein
  • 1 egg
  • 1/4 tsp stevia*
  • 1/2 tsp baking powder
  • 2 to 3 TBS water
  • 1 tsp vanilla/caramel/peppermint essence (optional)

Instructions

  1. Turn on a waffle iron and spray with some cooking spray.

  2. While the waffle iron heats up, add the whey protein, egg, stevia and baking powder to a bowl and mix with a fork.

  3. The mixture should be quite thick, so add 1 TBS of water at a time, until the correct consistency is reached.

  4. Spoon 1 TBS of mixture into the centre of the waffle iron, and cook for 45 seconds (this may be more or less, depending on your waffle iron)

  5. Top with some nut butter/honey/sugar free syrup.

Jo's Notes

* If you are not a fan of stevia, you can use any artificial sweetener you prefer, alternatively 2 TBS honey/ agave/ maple syrup, or 3 to 4 TBS xylitol.

** This recipe is very versatile- You can add 1 TBS cocoa, if you would prefer chocolate waffles, alternatively 1/2 tsp cinnamon/ginger/nutmeg/ instant coffee, will make for a great breakfast treat.
