“‘Weight watcher’ friendly chocolate mini muffins”

When I was little someone told me that if you eat pips, plants will grow in your tummy. I can’t even remember who told me this, but because of this little fib I grew up avoiding things like tomatoes, strawberries, watermelon and granadilla (to name a few).

I’ve grown up since then, thank the pope. I’m not sure if it’s because I want to make up for lost time but whenever I see strawberries on special, I have to buy them.

They are so good for you and from a calorie perspective- they are amazing!!!

Unfortunately you can only eat so many strawberries, so more often than not, we end up having to throw them away. Now, I’m totally against wasting. Instead of freezing them to add to my morning smoothie, I decided to try and bake with them.  To my suprize, they worked!!! Perfectly!!! First time too, which almost never happens!

These mini muffins were finished in half a day! I think Sheldon actually blamed the cat. I hope these last longer I’m your household than they did in mine.

Just a small disclaimer- I actually don’t know too much about ‘Weight watchers’…is it even still a thing? I just liked the name #cringe

'Weight watcher' friendly chocolate mini muffins

Ingredients

  • ½ cup instant oats
  • ¼ cup coconut flour
  • 1 scoop chocolate protein powder
  • 2 TBS cocoa
  • 3/4 tsp stevia powder
  • 1 tsp baking powder
  • 1 tsp liquid sweetener
  • 1 egg
  • ¼ cup unsweetened almond milk
  • 15 strawberries

Instructions

  1. Preheat oven to 180’ and spray a mini muffin tray with some cooking spray.

  2. Add all of the ingredients to a food processor or blender and blend until smooth.

  3. Spoon the muffin mixture into the muffin tray, until each holder is about ¾ full.

  4. Bake for 8 to 10 minutes.
