South African Date Balls
Ingredients
- 1 ½ cups pitted dates
- 1 cup boiling water
- ½ pack sugar free Marie biscuits (I bought mine from Checkers but Dischem stocks them as well. I’ll post a picture of the packaging so you know what to look out for)
- 1 TBS vanilla essence
- 2 TBS organic coconut oil, melted
- A pinch of salt
- ½ cup desiccated coconut, for rolling
Instructions
Add the dates to a microwavable bowl and heat for 50 seconds (this will help to soften them slightly)
Add the dates and the boiling water to a pot and heat, stirring constantly. You want to create a date paste. You may want to use a fork to press gently on some of the dates that are taking longer to soften.
After your dates have turned into a paste, set aside to cool slightly.
Place your Marie biscuits into a bag and crush them using a rolling pin or if you really want to get creative, get the kids to stand on the bag. You want some crumbs and some chunks.
Add the vanilla essence, coconut oil and salt to the cooled date mixture and stir.
Pour the crushed Maries into this mixture and stir until a sticky dough starts to form.
Using a TBS, scoop some of the dough into your hands and roll into balls.
Roll each ball in the coconut and then set aside
Allow the balls to set in the fridge for at least 1 hour
