As it’s known, I have a major sweet tooth, which is obviously why I started ‘Pulll ups and Peanut butter’. My 29th birthday, unfortunately, fell during a time that I had to really hone in on my diet, as I was competing in a powerlifting competition shortly after…

I had to have something that I could stick some candles into and share at my birthday dinner…these babies came in at only 21 calories each!! Which meant that I could basically devour the entire tray…That, in itself, was a birthday present!!! I hope you enjoy these xxx

Birthday Cake Blondies

  • Cook Time: Minutes


  • 2 cups steamed cauliflower
  • 4 egg whites
  • 1 tsp vanilla essence
  • 1 tsp liquid sweetener
  • 2 scoops vanilla protein powder
  • ½ tsp stevia powder
  • 1 tsp cinnamon
  • 1 TBS rainbow sprinkles


  1. Preheat oven to 180’ and line a brownie tray with some tinfoil, shiny side down.

  2. Add the cauliflower, egg whites, vanilla essence and liquid sweetener to a blender and blend until a smooth puree starts to form.

  3. Add the protein powder, stevia powder and cinnamon to this mixture and blend until well combined.

  4. Spoon the mixture into the prepared brownie tray and top evenly with the rainbow sprinkles.
